Celebrate Shrove Tuesday with the help of Congress Centre

Posted on 22 June, 2018

To celebrate Pancake Day on 17th February 2015, here are a couple of recipes you may enjoy from Congress Centre, one of the leading conference and meeting venues in Central London.

Beat the bloat: gluten-free pancakes

125g gluten-free plain flour (available from most good supermarkets and health food shops)

1 egg

250ml milk

butter, for frying

Put the flour in a bowl and make a well in the centre. Crack the egg in the middle and pour in a quarter of the milk. Use an electric or balloon whisk to thoroughly combine the mixture. Once you have a paste, mix in another quarter of the milk and once lump free, mix in the remaining milk. Leave to rest for 20 mins. Stir again before using.

Heat a small non-stick frying pan with a knob of butter. When the butter starts to foam, pour a small amount of the mixture into the pan and swirl around to coat the base – you want a thin layer. Cook for a few mins until golden brown on the bottom, then turn over and cook until golden on the the other side. Repeat until you have used all the mixture, stirring the mixture between pancakes and adding more butter for frying as necessary.

Serve with agave syrup and a squeeze of orange juice or a pancake filling of choice

Veggie Chinese pancakes

Skip the duck and served with mushrooms, greens and hoi sin sauce

200g mushrooms, sliced (we used chestnut)

2 tbsp soy sauce

½ tsp five spice powder

1 tbsp rice wine

½ tbsp sesame oil

1 tsp sugar

6 Chinese pancakes

2 spring onions, finely sliced

5cm length cucumber, deseeded and sliced into matchsticks

½ little gem lettuce, shredded

4 tbsp hoi sin sauce

Heat a small frying pan.

Add the mushrooms, soy sauce, five spice, rice wine, sesame oil and sugar. Stir until the mushrooms are cooked and the sauce is thick, bubbling and clinging to the mushrooms. Warm the pancakes by steaming them or heating them in the microwave.

Serve the mushrooms, spring onions, cucumber, lettuce and hoi sin sauce in separate dishes, with the pancakes alongside.

To assemble, spread a pancake with a little hoi sin sauce. Add some mushrooms, onions, cucumber and lettuce. Fold the pancake and enjoy.
